Remember the time when the school bell rang and we all rushed to the exit gate to check that the yellow potato vendor, bhel puri etc, walas are there or not. Primarily the excitement to reach home was overpowered by the presence of these delicacies to cherish introduced mostly all of us to the phrase – street food. One more instance when we were ferrying on the shoulders of our grandparents during carnivals withholding seasoned corn with salt and lemon in one hand.

It’s a saying in India that at every 8 miles the dialect change and so it changes the food slightly though. This change made the innumerable list of street food that is available and loved by the entire country and the multiple countries love our food as well.

It's not only chaat that defies India but the food from all corners of the country is also now loved and enjoyed by the people nationwide. Ask a Punjabi what a Rava dosa is and he can equally describe it as lovingly as a guy from Chennai will let you know what Chola bhatura is. 

Let’s take chaat for an example- the golgappa becomes fuchka in Bengal, it turns to batasha as well but the tangling of the buds remains the same for the person who eats it. Aloo Tikki topped with mint/coriander chutney becomes Bhalla in Lucknow yet it gives the same satisfaction to the large crowd that throve to the streets to satisfy their chaat hunger.

Variations in dosas are so enormous that it stands out to be a cuisine in itself. Renowned restaurants fail to give the taste in sambhar which you get in the sambhar available on the streets of major cities of India. Who can undermine the flavours of vada/appams/upma/uttapams etc which are now the famous street foods not only in India but around the globe? Yet the credit goes to those vendors who left their hometowns to make the world aware of the snacks which were unknown a few years ago.

A vada pao has the power to defeat the burger if the flavors are to be considered. Rustic and earthy but imagine its popularity that the name of a city relates to this street food. Mumbai is synonymous not only to vada pao but pao bhaji as well. Equally lip-smacking versions are available at least at one street food corner in every city of the country. 

Kathi rolls are the pride of Kolkata and its tough to find a locality where you may not spot a Kathi roll shop and be it large or small, neat or messy – the enthusiasm to serve the best roll of the city remains the same for the person who prepares it. The perfection required to make a perfect Kathi rolls comes with experience. The juicy stuffings inside the flatbread with crunchy veggies with the sauce like chutneys make it a perfect street food that fills the tummy as well.

The words are not going to be enough to describe the street food and their varieties available so its advisable to make a trip around the country and taste the heavenly experience to understand the street food better.
