Step one: to get this vegan banana pudding started, you’ll need your Simply Delish Instant Banana Pudding mix and a plant-based milk of your choice. Empty the banana pudding sachet into a bowl and measure and pour in 11/4 cup of the milk.

 

Step two: Take the handheld electric mixer and start mixing the powder and milk combination for two minutes until homogenous and smooth.

Ingredients:

 

Blondies:

  • 1 cup oat flour
  • 2tbsp corn starch
  • 1/2 tsp baking powder

  • 1 large banana mashed
  • 1/3 cup almond butter
  • 2 tbsp oat milk

  • 1/2 cup oat milk, plus 2 tbsp

Instructions:

 

Blondies:

  1. Preheat oven to 350°F.
  2. Prepare flax egg and set aside. Mix dry ingredients.
  3. Add wet ingredients to flax egg.
  4. Then combine dry and wet (do not over mix).
  5. Transfer to prepared 9×5 loaf pan and bake for approximately 25-30 minutes.

Banana Pudding Frosting:

  1. While blondies bake, whisk pudding mix with milk for 2 minutes. 
  2. Once blondies have cooled, spread on frosting plus optional toppings and enjoy!
