2 Chicken Recipe I Found for Ninja SP101

This is one of the best recipes for that classic pocket blaster, the Ninja Sp101. The only catch is you will need a couple of chicken breasts. But other than that, this is some good eats.

 

I found this recipe for two and we can't stop eating it! It's a great dish for those times when you want something different from just your typical spaghetti and meatballs, but don't have time to cook anything else.

 

The recipe calls for some red pepper flakes, but I always keep a jar of them on hand and they are usually enough to add the needed heat to the dish.

Ingredients:

 

  • 2 chicken breasts (about 400 grams) - cooked and sliced thin.

 

  • 4 tbsp olive oil - for frying chicken (get yourself a good quality one).....

 

  • 2 heaping tbsp of flour - any flour will do. I like to use cornmeal to help the coating stick.

 

  • 1/4 cup white wine - cooking wine is fine. If you don't have any at home, try adding a little bit of vinegar to some regular white or red wine you have at home until it comes out to be about 1/4 cup.

 

  • 1 tbsp paprika

 

  • 1 1/2 tsp salt or to taste

 

  • 1/2 tsp dried oregano - my favorite...definitely use this here! It is also important that you don't skip this ingredient.

 

  • 1/4 tsp red pepper flakes - or to taste.

 

  • 1/4 tsp garlic powder - optional.

 

  • 1/4 teaspoon black pepper - optional.

 

  • 3 large eggs - optional

 

 

Procedure:

 

1.   Heat your ninja sp101 oven to 400 degrees (F). While it's heating, prepare the oil. It will be used later to fry a chicken. In a medium bowl, combine the flour and paprika and set aside. Then add the olive oil and mix well. If you are using a large skillet or cast iron pan for frying, transfer it at this point to another bowl for easier cleaning at this point.

 

2.   Add the flour and paprika mixture to your oiled skillet along with half of the wine. Stir well to coat all potential pieces of chicken and then place it on top rack in your preheated oven. It is important that you NOT use it at this point, or you'll end up with a soggy mess of chicken. It's a good idea to put a heavy cast iron pan on top of the chicken when you place this dish in your oven. It will help keep it somewhat crispy while cooking.

 

3.   In a bowl, mix together the eggs and the other half of the wine. This will be used to dip our chicken into while we finish working on our sauce. Set aside.

 

4.   In another bowl, finely chop the oregano. This is an easy way to collect it all in one place so you won't end up with a lot of crunchy crumbs when you pour it over your chicken.

 

5.   In yet another bowl, mix together the salt, pepper and red pepper flakes.

 

6.   Let the chicken sit at room temperature for about 30 minutes so it is easier to work with.

 

7.   Now, mix the egg and wine mixture together and set aside. This is a good time to put your cast iron skillet or pan in the oven again to heat up.

 

8.   When ready, take the chicken out of the Ninja Sp101 oven and remove it from the top rack before transferring it to a cutting board or plate.

 

Here is where you'll notice that the instructions call for you to spread your chicken with this egg mixture. I find that it makes it much easier and more professional looking to just dip my fingers in the egg mixture and coat my chicken. To do so, pour your egg mixture over your chicken and then use a fork to gently mix the sauce into your chicken.

 

When you're done, transfer the chicken slices back into the skillet and add the remaining ingredients. Toss it all together well to coat all pieces of chicken well.

 

If needed, add more salt or pepper at this time, as well as any other seasonings you might need for the dish. Stir well and then place your cast iron pan or dish on top of the pan you used earlier to heat up.

 

Bake for 15-20 minutes,

 

If desired, broil it with the lid open for an additional minute or two to give it that extra crispy crunch. Or, if you want a softer crust, leave the lid down during this step.

 

Serve with a side of rice, or potatoes and green beans. Enjoy!
